Drink now or cellar for up to 4 years. Serve well chilled. Sam Pelter emigrated from the US to Israel in 1970 and set up a farm in Tzofit before the family relocated to the Golan Heights in 2005. The Pelter family only began making wine commercially when Sam’s son Tal returned from Australia full of inspiration from his winemaking studies there. Today the winery crafts delicious Israeli wines which express the exceptional terroir of the northern Golan where the hot, sunny days are moderated by cool, fresh nights. The grapes for this crisp and refreshing Sauvignon Blanc come from the magnificent Haruach Vineyard in the Golan Heights which is 1100 metres above sea level. Conditions here are ideal for making light bodied, vibrant white wines since the big temperature difference between the day and night preserves freshness and aromatics in the grapes. To show off the character of the variety the grapes are fermented in stainless steel tanks and left there to mature for 3 months before bottling. This creates an elegant and vivacious Sauvignon Blanc that’s bursting with fresh cut grass, lime, honeydew melon and plenty of lemon zest. The palate is zingy and light with hints of tropical fruit, citrus, and stone fruit as well as undertones of dried Mediterraean herbs and hay.
